Thanks everyone who has posted so far! I am enjoying reading these recollections. :) And I am writing down every single issue number you guys post, so that I can read them all.
Here's a good list. It's missing a couple, like New Mutants #18, X-Men/Alpha Flight, and Marvel Team-Up; but it's pretty comprehensive. It's listed roughly in the order of when it happened in her life, so you can see that issues that had flashbacks that happened before another event, although published later, are listed first. Instead of listing almost every Rachel appearance, if you wanted to find the classic moments I'd suggest

    Days of Future Past TPB
    Essential X-Men 5
    UXM #199-209
Classic Excalibur TPB - Collects Excalibur : The Sword is Drawn and the first 5 issues of Excalibur.

That would give you DoFP Rachel, Normal Rachel, Hound Rachel, Phoenix Rachel and Excalibur Rachel. Plus they are all good X-Men stories to boot.

This is excellent! Thanks guys. :)

Maybe not specific moment or moments, but I liked the stories of End Of Greys and Wandrin Star. If there is a story arc that would cause sympathy or attachment to the character, it would be those two story arcs because of the impact to Rachel's life as well as to those close to her.

I liked the X-Men Unlimited story where Havok and her get a meal at a diner... it's honestly the first time I actually found the character sympathetic, at all. She's done pretty well for herself, since.

I think it still rates below Nightcrawler suckerpunching Mephisto, but that is impressive, and needs to happen more often.

I realized that I keep getting confused between the Beyonder and the Watcher for some reason..

But, what was the reason for Rachel slapping the Beyonder here?

If Kurt got to punch Mephisto then I hope Peter Parker gets to anally rape him with a jackhammer or ....something!!! Something really horrible.

He put all the X-Men in danger of getting killed by Sentinels created from Ray's future and then gave her a huge power up to deal with it. It's all part of his manipulation that plays out in the next issue. And then I think they clash again in Secret Wars 2 but after all these years I've still never read that. lol

    someday...
