I'm not saying Beryl should rush into things without finding her footing as Knight. Re-read my post. My point is that the Squire mantle is equally important. There was a Squire before there was a Knight. The Squire mantle leads directly into the Knight mantle (more so than almost any modern hero-sidekick paradigm).
A little time to mourn her loss and to get used to being the one making the decisions instead of following orders. Finding a suitable person for the role. Of course it is not quite the same as Robin dying as he was Batman's son and that would be replacing a sidekick with another sidekick, but it would still involve getting used to a new partner, building trust etc. She would need to be as sure as possible that she had chosen wisely. There is also the possibility of the return of the previous knight to consider.

I should have been clearer as to why I thought that she would not want to make a prompt decision, in your original post you said that she should choose a squire promptly with no more explanation than you thought it important. Perhaps it is that important and Beryl does know that, but my point was that even if that is so, she may be reluctant to make that decision quickly even if she knows that she should, for all the reasons I mentioned. People sometime make rash decisions when mourning or are reluctant to move on completely.
