Because where talking about a teenager here, a vulnerable teenager. Sure Emma is a sexuality character, but she not a predator. And given that she a teacher, or at least that where her passion lies, this would be a road that could easily backfire on the character.

Just because its not technically illegal, doesn't mean its not morally wrong. Yes, she took advantage and preyed on adult Scott, but still to have her do it with the teenage version is kind of pushing it a little far. Especially given that Emma is a teacher at heart, having her prey on a teenage boy i just don't think would reflect well on her character. Emma certainly is not a "good girl", but even so i think it that would be too much even for Emma.

Overly dramatic Jean? Go back and watch the X-Men animated series from the 90s. Her appearances mostly consist of her falling down and screaming in pain as she's overwhelmed by whatever psychic feedback of the moment. Hilarious!

Also, the manner in which they use "destroy" in place of "kill" is pretty funny too.
