They should get Famke again to play Viper.

Agree with this completely. Famke Jennsen's performances in the first three X-men movies (X3 notwithstanding) was a highlight of the X-men trilogy. She seemed to have good on-screen chemistry with Hugh Jackman so her being Viper would definitely make for some interesting dynamics. In the comics, Wolverine was actually tricked into marrying Viper so there's a lot of interesting ways the story could go.

Sadly, I think Famke has since decided to stop acting and work mostly on producing and directing. So I don't think we'll ever see her in another X-men movie or any movie for that matter. But we can dream, can't we?
