That's something I was thinking about when I bought the Batman Hush Unwrapped book (which should have been in a bigger format by the way).
The art is Jim Lee pencils but they have all the lettering/text, did they have to redo all that or what?
I WANT this DD book SO much, but it is freakishly expensive... so probably not.
Yes, in the case of the "Hush Unwrapped" book, they added the digital files back on top of the art to protect the readability of the pages. Some art got covered up that way, no doubt. Back in the day, lettering was done before the inking, so the inker didn't have to ink areas where balloons were. But they did have to make sure to stop their lines abruptly at word balloons.
I wish the "Hush Unwrapped" book had omitted the lettering, actually, but the book would have been almost unsellable at that point. An Artist's Edition of that would be awesome, too, except there's too much material there. These AEs tend to run five to seven issues.
"Groo" is out next, and then hopefully the delayed "Spirit" will follow...
