In this, Jenkins is king. Peter Parker Spider-Man #20 and #33 get the highest recommendation if you're looking for stories about why Uncle Ben was a guy who should be mourned.
A lot of people give JMS crap, but I love that back-up in Amazing 500-a truly touching story. Also, that one Mark Waid story as a back-up in a more recent issue where Peter says he's trying to make uncle Ben, not his father, proud, was pretty awesome too

(To elaborate: We got to see how important Ben was from how Peter and Aunt May were shown how they felt about losing him. The stories I've read involving his pre-AF #15 biography always struck me as superfluous or redundant at best - gilding the lily, when one of the beauties of AF #15 is the economy of its storytelling. I disliked Paul Jenkins' PPSM nostalgia stories - they struck me more as if they were about Jenkins' feelings about his own childhood than Peter.)
