Because that situation lacks both action and drama. Besides, Cap is the kind of kid that after being punched by Hulk (In Ultimates cartoon/movie w/e) ran back up to him and while swinging on ol' Hulk informed him "This isn't over." Cap's got big ol brass, so even if he would break his hand on Wolvie's jaw, I don't see him caring. He's a solider, use to dealing with injury while trudging through.
