Truthfully fully as long as you have Iron Man first (or 2nd if you start with Cap) it really doesn't matter which order you watch IM2, Hulk or Thor since they roughly all take place at the same time and all end with a set up for Avengers (well IM2 sets up Thor but again they are roughly taking place at the same time).
You can barely see it unless you have the Blu-Ray of the film, which I don't. Hence why Marvel has placed them pretty close together. The teaser for "Thor" at the end of "Iron Man 2" at least allows you to go from one into the next and "The Incredible Hulk" is free and clear.

The best way I would say is in order of release. Chronological order doesn't make for the best story telling some times. IMO order of release tells the story the best, plus you really see the expansion of the universe from Iron Man to The Avengers.
Not watching them in any particular order, but so far today in the order I have watched them, Incredible Hulk, Captain America, Iron Man, Iron Man 2. Hope to maybe watch Thor tonight, or maybe tomorrow or Tuesday.

Watched one each night last week with my friends. Started on Sunday and went to the cinema on friday to see avengers. Very fun and enjoyable week.

Which doesn't make sense. Stark says that he wants nothing to do with the Avengers. Why would he say that he's part of a team that's being formed and then six months later say that he doesn't want in?

We also have Sevling mention his Gamma scientist friend who disappeared. And Loki's apparent death and return.
-"Incredible Hulk", especially when you substitute the extended conversation between Blonsky and Ross for the theatrical version, discuss the Super Soldier Project and what it was that Banner was working on that resulted in his being the Hulk. It also ties in nicely since what Erskine said to Steve applies to both Banner and Blonsky's alter egos. Bruce Banner is inherently good and so the Hulk has a very human look to him, while Blonsky was a soldier through and through and becomes motivated by revenge, which is why he's ugly as sin. And in fact, he goes rogue as a result of the injections. Going from obeying orders to disobeying to outright trying to kill his superior officer. Much in the same way that Schmidt not only became hideous, but went against Hitler's wishes. Then at the end we have Banner realizing that he needs to start stepping up with the Hulk, rather than destroying him and Stark, who is now willing to try and give it a shot, goes to Ross.

Edit: I actually think Incredible Hulk would have to come before Iron Man 2. Doesn't he quit the consultant job at the end of IM2? According to "The Consultant", he still has it at the end of IH. I think.
Watch it in any order you wish but The Downey cameo will never fit. The original plan was Tony was inducted after Iron Man and the Avengers would be about them teaming against the Hulk.
Feige pretty much said that hanged after Iron Man 2. That Coulson short just changes the scene where Stark is called in to annoy Ross so they don't get stuck with Abomination in the Avengers. Which is pretty lame.
It's also pretty obvious Tony is not an Avenger from the trailers until midway in the movie and it looks like Banner is recruited by Shield Before Stark.
