You make a good point. Although video games that use unconventional control schemes have evolved somewhat since the days of the NES Power Glove or those VHS light gun games to give two examples, there's still a ways to go before they're anything but an only occasionally fun gimmick.
I still think the dance competition sections of Star Wars Kinect are comedy gold, but then I stopped being an active fan of Star Wars around the time I realized I had no interest in seeing Revenge of the Sith. Still haven't seen it.
If you want to enjoy Revenge of the Sith, ignore the movie and read the book by Matt Stover.
And I've been tormenting the wife with the Han Solo song in the last few days.
As for Kinect: they actually could have made it work the way originally intended. It's just that they removed the internal processing chip for cost cutting and made it run off the 360's own processor, which dramatically lowers its ability to track and read motions. It's also the reason for the motion lag.
