One guy is much faster and much stronger, one guy has some sticks.

If this was a purely physical brawl, then sure. I don't think it is, Joss was talking about Widow shooting at Buffy and then going on about her poisoning Buffy earlier. Buffy might be good, but she's not going to avoid every single bullet shot by the Widow.
