Great choices, regarding continuity DC has reset/changed/fiddled etc a few times. First was Crisis on Infinite Earths which you've got in Absolute(which now apparently never happened in the New 52) , then Infinite Crisis then Final Crisis. Finally Flashpoint reset everything to start afresh as it were.
From what I've read, going back to an earlier point, basically everything that was pre Flashpoint never happened. Or this is what it appears DC is trying to say without insulting it's fans. So really/technically there is only Flashpoint in terms of continuity, but the other events can be read just might get a little confusing as there are also lead ins to events and other year long stuff they did in between(Countdown,52, other stuff I can't recall).
I'd pick up flashpoint, then check out Infinite/Final Crisis trades and see if you like them. If you do there's Absolute Final Crisis coming, along with Infinite Crisis Omnibus.
Also this stop the stories being good either, most of DCs best stuff is in Absolute or Deluxe HC so if you're picking up something in those formats it's going to be more likely to be good than grabbing a trade. Gotham Central is one that's not in either but hopefully it's only a matter of time as its an amazing read.
