Honestly, it's been pretty faithful so far. The only huge difference I've seen so far has been Drogo's injury. It happened in the battle not fighting one of his riders in the tent. Also, Sam wasn't originally chosen to join the watch with the other boys. Jon went and asked Aemon to take him as his steward because he knew Thorne would kill Sam if Jon and the others weren't there to protect him.
And even the edited/new scenes are pretty faithful to the story. The somewhat rueful conversation between Robert and Cersei in the early/middle of the episodes was made from whole-cloth but entirely fitting in the story. It was a great scene that gave a lot of information with very little exposition.
This is show is awesome. Tonight episode was great.
I just watched episode 9 and it did contain some interesting events.

Eunuch-Guy seems to be about a noble person as exists in King's Landing. He seems truly devoted to the realm ... well, the ideal of what the realm could be. He did seem saddened that he had to let Ned die.
Cercei (?) ... you know, Joffrey's mother ... seemed to be surprised at the command to execute Ned. This, in itself, seems surprising as there would be no way a spoiled and egocentric jerk could bare to let Ned live, even in exile. Sansa not seeing it is one thing, she's incredibly dense, but Cercei should have been a better judge of character - especially of her own incestous offspring.
Rob is stepping up to the plate somewhat, accepting that leading an army means making some rather unpleasant choices. His military feint to capture Jaime was well done.
Ned's younger daughter seems to have her head screwed on right. Stuck in a hostile city, she didn't break down or cry - she did her best to get by. Catching her own food, for starters, even if it was pigeon.

This isn't a spoiler given the nature of the show, but in my opinion, as it continues, it will literaly be imposible to skip cut all the battles.
Especialy in the next book, or their season 2. I understand budget constraints, but it's going to be dissapointing if we never see a large scale fight.
And, as i said, impossible to do the show without massive changes to the story. Or we will have like 5 minute long episodes because they cut all the fighting out.

I'm trying to think back to the HBO series closest in scale to Game of Thrones ... Rome, I think.
Rome had a lot of military action but I don't seem to recall any/many large scale battles.

What they did to Tyrion in the past, what Joffrey Lannister (I refuse to use his fake name) did.
A king who can't abide by a struck deal is nothing but worthy of death. I also found it interesting that in the first episode Ned instructed Bran about a man who passes sentence on someone should be willing to carry said sentence out himself and here Joffrey proves how much of a paper lion he is by ordering what happened but not doing it himself.
The stuff with Arya in the crowd was great.
Great episode but man am I pissed about the developments.

In a general, non-spoilery sense, the main difference between the books and the TV Show is that the TV Show has added scenes and dialogue to help develop plotlines and (especially) characters that are important to the overall story, but that if the books were followed "to the letter" would basically get all-but-ignored (or at least not seen much "on page") until later seasons.

LOL, I remember that feeling.
In my mind, Joffery has made his second mistake. Killing Ned rather than letting him go into exile sends a clear message about how unstable he is. Whiel his mom probably wouldnt do anything, there are plenty of others (like Little Finger) who probably started planning assassination attempts the minute Joffery asked for Ned's head.
