Does anyone know the morlock Bliss's real name, I have seen around the internet that it is Barbara Stacey but can not find any issue or record confirming that is her real name any help would be appreciated!
I'll ask what sources you've seen that have listed her name as Barbara Stacey, because I've not seen that on any of the more accurate sites like uncannyxmen.net, marvelunofficialappendix.com or marveldatabase.com.
Sometimes a fan just comes along and applies a fan-fiction name to someone. I've seen it when doing research before. A lot.

If I didn't know about a comic that might have some kind of an answer, I'd theorize it was because Emma didn't demonstrate it until a trauma kicked in a secondary mutation much later in her life. The Cuckoos have died from psychic attack (Sophie) and having earrings forced into their brain (Esme). They've never had what Emma went through in Genosha to bring about such a genetic change. Except for this one time...
In the Phoenix: Warsong miniseries. (Ugh. Now I gotta skim through that.)
Peter F. is right. They were containing the Phoenix Force within their diamond hearts. Happened in Phoenix: Warsong #5.
In theory a writer now could say they lost that ability when the Phoenix left them in Uncanny X-Men (vol. 1) #517, or that at this point, they have the potential to achieve diamond form again, but have simply yet to realize they can do so. The secondary mutation is again "lying dormant", perhaps.

What was the deal with that "First to Last" arc in Adjectiveless a couple years back? Did the X-Men meet the Original Five then, too? Why doesn't the O5 remember this?

They didn't meet. In the story, they meet villains called the Evolutionaries. Turns out, the O5 had met them while they were still the O5, as had Magneto and Toad in the O-Brotherhood days. Their memories of this meeting, however, had been erased. It was only upon the return of the Evolutionaries that the repressed memories came back- somehow due to a tip-off by Jean Grey. From somewhere.
It's... it's not a great story. Maybe the worst story I've seen Chris Yost write. I normally like his stuff, but damn, was "First to Last" rough.
