Nationality is easy. He's American. Multi-generation, the Starks have been in the US since at least the 1800s. Isaac Stark, an ancestor, was the son of the president of a railroad company. Race is pretty easy, too. He's white. That said, his mom is at least half Italian. And Howard's ethnicity was never delved into too deeply.

Although just going by the names, both Howard and Isaac Stark are pretty Jewy. But as far as the comic goes, they aren't. Just trust me, they aren't. But the names are. Tony, not so much, but Howard and Isaac Stark, definitely. It's a fairly common Ashkenazik Americanized last name. And the first names are fairly well used in the Jewish community as well, especially around the time Stan and Jack were in their prime.

But they aren't. I'm not saying they are. They are as Jewish as Peter Parker, which is to say not at all, except Stan was writing them.

Only Ultimate Tony has an on-page established ethnicity. 616 Tony's family is typically portrayed as being exceptionally waspy. His mother was either a wasp, or an Italian American - this seems to vary from writer to writer - but afaik it's never really been discussed on-page. Tony's family actually doesn't come up that often.

    Tony's Tanabedian.

Okay, I made that up. (You know he owns one, though.) Never really thought of it, nor heard anything come up about his nationality. If I had to guess, then yeah, I'd say Italian. (Looks like my old boss Jon Bellotti, who was Italian.)

I've always thought that Tony Stark was of German-American descent (though distant enough to be thoroughly Americanized). Stark is the German word meaning strong, and its a fairly common last name amongst German-American immigrants.

Anthony is not only an Italian name, it's generally a Catholic name (which is why it's also a popular Hispanic name. The German version of Anthony is "Anton"). It's possible that Stark's parents were Catholic.

I've never thought as Stark being Italian-American. His dad's name was "Howard," which doesn't really seem to indicate Italian to me.

As for Obadiah, he might be Jewish. However, those Old Testatment names (Obadiah, Ezekial, etc.) were very popular amongst the Scotch-Irish settlers of the Appalachians and Mid-West. Maybe he's Scotch-Irish

Unless it's Italian, which it is also. Oh, Rome, what with your conquering ways, spreading Latin-derived languages throughout the world!

He's pretty blended. Italian, Jewish, and probably a bunch of other stuff. He's a mut, like most of us Americans. :D

I'm just saying, Howard Stark is a much Jewier name than Obadiah Stane. Not that Stane couldn't be, but Stark is far more common. And while Obadiah may have Hebraic roots, it isn't a very common name as far as I know, even within the religious community. Typo Lad doesn't appear to be online, but I'll give him a holler for some backup on that.
