    O. Henry is probably the king of twist-endings.

Saki also used a lot of ironic twists in ending his stories.

Philip K. Dick also puts a twist on the end of quite a number of his works.

Jorge Luis Borges wrote some short stories with twist endings -- "The Garden of Forking Paths" and "The House of Asterion," for example.

    Arthur C. Clarke's short-short Reunion has a great twist.

A.I. was based on Brian Aldiss's story "Supertoys Last All Summer Long," not Dick.

I second Borges. My favourite short is the one concerning Judas.

Kelly Link's Magic For Beginners has some nice twists and quirks in it.

Franz Kafka's The Hunger Artist. Brilliant piece of writing. (though perhaps not the sort of "twist" you're looking for)

Dude... everyone should read Kafka's Hunger Artist its quite possibly one of the greatest short stories ever... but like Ryan said, the twist probably isn't what you're asking for... its still sweet though.

    Default Ambrose Bierce

I always loved the short stories by Ambrose Bierce. Especially "The occurrence at Owl Creek Bridge", which is one of the prototypical twist-ending stories.

Philip Dick is recommended, as well - though I'd say that his strength are novels. Some short stories, like "Impostor" have nice twists, as well.

In the novels section, I'd say go for anything by Kim Newman. His stories twist and bend without end, as do those of Tim Powers.
