Clearly history is on my side in this. No writer has taken on the task because they aren't that interesting. Sersi did give plenty of material as an Avenger... she's the one.

The Eternals just aren't that interesting to a lot of people since they are just more Gods-derivative characters which the MU already has plenty of.
They are super criminals who SHIELD is tracking. They get an early win over some agents and maybe one or two of the Avengers before getting captured. The big bad shows up and threatens the world....

There is absolutely no reason to change their origin. It's already weird by the not often mentioned "High Evolutionary held them in stasis for a few decades." part of their origin.
