My personal fighting game character picks:

Tekken Series: King, Baek or Craig Murdock
Dead or Alive Series: Kasumi, Tina or Bass
StreetFighter Series: Zangief (Hugo in SF3)
Mortal Kombat: Kabal
SoulCalibur: Astaroth or Ivy

Going to add a couple :)

Marvel vs Capcom series: Hulk, Zangief plus one other (usually Guile)
Guilty Gear Series: Milia Rage

The only two on that list that I play regularly are Mortal Kombat and Street Fighter. Now that Kabal is back in the MK games, I play as him mostly. My favorite characer in the SF universe is without a doubt Ken.

Street Fighter: Ken, Blanka (when I just want to f-around)
X-men vs SF: Wolverine / Storm, Wolvie beats on the ground and once they are weak Storm cheap-shots them with typhoon from way up in the corner. :)
MvC: Evil Ryu, Akuma, and Ken... it's just soooo much fun sometimes. I also like Megaman, Roll, and her little lego guy (I get 120 hit combos from their level 3 team attack)

I haven't played Tekken or DOA.

If Street Fighter includes the Vs. series, I'm partial to my Captain America/Captain Commando team from MvC. My favourite SFA3 character to play as is Dan (Doushita doushita! Yahooey! Gomen-janijou! Saikyou-ryu!).

I like Scorpion from Mortal Kombat, though I'm able to handle pretty much any character from the games; I could consistently do Frost's 11-hit Style Branch Kombo, but I'm out of practice.

From Soul Calibur, I love Nightmare with the Complete Soul Edge.

Ah, Killer Instinct. A great game indeed. Except for KI Gold. It was nowhere near the original (the same happened with MK Trilogy: a complete disaster).

For KI, I always use Jago.

For Samurai Shodown, I pick Hanzo.

Well, with most fighters I don't bother specializing, and just work my way through the roster. 'Course, I have never done this with a game with more than 20 or so characters.

Guilty Gear series - I enjoy playing Venom, though I am not incredible with him. I also been enjoying my Robo Ky Mk. II. :) Still need to get the Gamma Ray to play around with it.

In Ergheiz, I play the old guy only when I want to beat who I'm playing with.

Tekken series: I mainly use King and Armor King. I'm not brilliant with either of them, and I haven't gotten the hang of all of King's grapples, but the jaguar masks just appeal to me, and it's cool to frankenstein an opponent.
Dead or Alive series: Kasumi is my homegirl! Back on the first Dead Or Alive I'd always pick her, and kick butt with her, but when DOA 2 came out it seemed I had lost the feel for her character. That, and I was never an expert on the DOA fighting system anyway, though the game does play pretty smoothly.
Street Fighter series: My best characters are E. Honda, Blanka, and Sagat. If any or all of these are missing in a particular SF game, I can switch to Chun-Li; her wall jump is really an asset, and she was the first character I beat Vega (Balrog in Japan) with in SF2.
Mortal Kombat series: I always use random select on Mortal Kombat. I feel that Mortal Kombat probably is the least sophisticated in terms of distinction between the fighting styles of different characters, even though they introduced the 'style switch' feature in MK: Deadly Alliance. That means I rely on special moves, and I find that Sub-Zero's special moves are my favourite. I also like Sektor and Kabal.

In Street Fighter and other 2D games I usually don't have main characters. It's easy enough to get well acquainted with most of a character's moves quickly, so I can usually rotate round the player select quite comfortably.

Dead or Alive is a series that I usually don't play. However, when I first start playing a fighting game series my first choices are usually the main character or the obligatory ninja.

I very rarely play a Mortal Kombat game, but when I do, I tend to go with Scorpion.

The only Soul Calibur game that I sank much time into was II, in which I specialised in Nightmare. I thought that, if Namco could call an evil knight "Nightmare" and get away with it then the character must be worth a bash.

In Tekken I've always been rather fond of the Mishimas(including Jin), and Paul, partly because I like to avoid characters whose move-lists are largely composed of attack strings. After them, Julia.

EDIT: ah, I just noticed the note in the opening post about any other fighting games that we play.

Virtua Fighter: Kage and Akira(see my comment regarding Dead or Alive for reasons). I don't actually play as Akira all that often these days, though I still find his attacks really satisfying.
I'm quite fond of the big grapplers, Wolf and Jeffry as well.

King of Fighters: Like Street Fighter I go round the player select, but for some reason I don't have frequent favourites in KoF.

I usually either have to cheat with Makoto (Tanden Renki: Seme no Kata FTW), or pound him with Q (w/enhanced defense) just to beat him. Remy and Ken just don't cut it sometimes, nevermind Hugo...

That, and the Final Fight characters (Guy, Hugo, and especially Cody).

I wouldn't worry about people's qualms with throws. Those mostly come from the earlier Street Fighter 2 days where throws were really good. They usually don't have the same reach or power anymore, so for the most part there's not really much that anyone has to complain about.

Tekken Series: Anna Williams, Lee Chaolan, KunimitsuSomeone who's good with Kunimitsu! She always feels wooden to me, Clint, but maybe I try to hard to force Yoshimitsu's style on her, which doesn't match at all.
DOA- Jan Lee, Ein, Ayene, Kasumi, Hitomi, and the thai boxer. (forgot his name)I think it's Zack, unless they introduced another thai boxer in a later DOA game I haven't played.

Speaking of the Smash Brothers series, I think it's a game series that deserves to be included in this thread, as it has a unique fighting system of its own. I used to love playing as Fox and Falco, speeding around and zooming in for a couple of quick hits before rolling back to catch my bearings.

Tekken series -- Jin Kazama, but I have limited Tekken experience.
Dead or Alive series -- 90% Ayane, 5% Ein, 3% La Mariposa, 2% every other character..roughly guessing.
Street Fighter series -- Guile
Mortal Combat series -- I haven't played MK Games since MK 2 and back then I was mostly playing as Sub Zero or Liu Kang.
Soul Calibre series -- VOLDO!!!!
