I am just starting out in the hobby and was wondering what some of the early issues of Amazing Spider-Man are the best to get for either holding their value or maybe even increasing in value? I recently bought #'s 50, 121 and 122. Are there any others that you can recommend?

look more for books with significant stories, so like first hobgoblin, first kigpin, first what ever, or like death of gwen stacy. Also, older books ususally do command a higher price, but mainly becuase they are 'first' stories. check out comicpriceguide.com for current prices and register for price tracking.
just to add, dont expect to get rich on comic price changes. the stock market is much better for making mucho denaro

39 and 40 are nice adds to any collection.

I'd focus on 1st appearances, and key issues. Especially if you are looking for the issues to increase in value. Silver Age Spidey issues always seem to increase in value, but I will warn you the nicer copies (graded as Fine, Very Fine or NM) get very expensive. I have a complete run of Amazing from #19-655 but most of my early issues are in the Very Good to Fine range.

And here I was about to post my little list I made only to find it and more already here!
Also looking back on the old issues anyone else feel like the mob bosses (Kingpin, Hammerhead, etc.) appeared far too often?

I agree it seems from #50-80(ish or so) That Kingpin was heavily featured way too much. Then once Hammerhead 1st appeared in the early #100's he was featured quite often also.

I read them in the Essintials or whatever and I just remember wanting to throw the thing because I wanted less mob bosses and more supervillans! I hadn't realized how important Kingpin was to Spider-Man seems so focused on Daredevil these days

Comics aren't investments. Buy the ones you want to read.

Anything from the Lee-Ditko era probably will always be in demand or at least hold its value. Other than that - kind of a crap shoot.
But this is not really good advice. Just speculation. I'm not really a collector, I just like to read comics.
