Most every track from Cowboy Bebop. It's a brilliantly animated series, but I don't think it would be nearly so legendary without the awesome music. It's the only series I own multiple soundtracks of (Music for Freelance being my favorite).

Gensomaden Saiyuki wasn't a particularly ambitious anime, but damn did it have awesome opening tracks. The best remains the first song, For Real, but where the original song is full of fun, exciting adventure and promise, the same song done on piano became one of the most beautiful but sad pieces I'd ever heard:

Gundam Seed Destiny had more than its share of self inflicted problems, but one thing that remained stellar was the musical score. The combination of regret, resolution and hope in You and I - Unfilfilled Feelings is a case in point:

Oda Nobunaga's theme from Sengoku Basara is the ultimate 'epic evil bad guy' theme. Along with the foreboding red lightning storm cloud, this song accompanied The Sixth Demon King wherever he went and carried his character over the top of this over the top series.

"Nube Negra" - Bleach OST 3. One of the many variations of the Mexican Guitar themes that the Arrancar use. All of them are amazing in my opinion but I find this one to be the best. If it wasn't for these badass guitar themes I would have stopped watching Bleach a lot earlier than I did.

Somethign I posted elsewhere a while back.
Just a thought that entered into my head to do. Wasn't able to quite come up with 10 that I recognized and remembered, so here's the top 7. Think of it as a top five that goes two steps beyond.

Now, this is, of course, a personal list. There will be some biases, and I limited myself in a couple ways. The first is that I kept myself to one song per series, and, if I know for sure, one per composer. Otherwise this quick becomes Yeo's top ten Yoko Kano tracks. I also avoided opening and ending themes and mostly stuck instrumentals.

"Awakening"/"Mezame" from Mai-HiME. There were a lot of things I liked about this series, and a number I didn't. But this right here? When this started up in one of the early fights? I was hooked from then on.

"Ifurita's Theme" from El-Hazard. Damn. This song just manages to exude sorrow and perfectly encapsulate where Ifurita is coming from as a character.

"Theme of ROD" From Read or Die. Gets a pass on the new opening rule due to showing up during the series itself. And so fitting a series that feels like the perfect blend of X-men and James Bond.

"Gakuen no Scarlet" From Revolutionary Girl Utena. Another character theme and another one that defines the character well, but from the other side as Ifurita. Big and triumphant and heroic. It was also pretty hard to decide between this, the student council theme, and "Zettai Unmei Mokushiroku."

"The Heady Feeling of Freedom" from Neon Genisis Evangelion. Hey, Eva has some actually upbeat music. Okay, pretty much this. A largely instumental version of "Thesis of Cruel Angel." I do believe this plays at the very end of the series, during Shinji's grand revelation that maybe he doesn't suck. Interesting for a number of reasons. If only for being a slower version of a song that beings to reach apocalypic speed as it went on.

"Story of Escaflowne" From... well, The Vision of Escaflowne. Now, it was super, super hard to narrow it down to just one Yoko Kanno track. Ultimately, for me, it came down to something from Escaflowne or "Tank." And, well, Escaflowne was the first anime series were I really noticed the music. So much so that I went out of my way to track down the soundtracks. Hell, what little musical appreciation I have is probably entirely due to this series. As for why this one? It mostly came down to this or "Dance of Curse." And this is just a bit better.

"Happily Ever After" from Gurren Lagann. Yeah. No one saw this coming. I considered "Pierce the Heavens With Your XXX," but there's a bit of melecholy attached what with what happens in the episode.
