So, I'm planning to go back and read Uncanny from Giant Size up. But I'm not sure if I should read the original Uncanny issues, or the Classic X-Men reprints?

For a more "director's cut" feel, go with the Classic X-Men. I loved some of those extra pages they managed to slip in between the original stories such as Iceman flipping out at the site of the new team, and Wolverine fighting Angel (because he thought Wolverine was doing "bodily harm" to Jean). It filled in the gaps quite nicely.
I have the original (vol. 1) in Omnibus form, but so far they only have just one volume of that (which starts from Giant-Size to 136 I think?).

If you have the chance, I'd read the X-Men Classic reprints- you get all the same stories, with additional stories thrown in. (Alternately, many of the X-Men Classic original stories were collected in two TPBs called X-Men Vignettes, if you can find them.) Some of them are quite good, some are disposable, but assuming the relative cost is the same (or the Classic X-Men are less), go with Classic X-Men.
