What Bat-stories would you like to see collected in a single, handy-dandy volume?
Personally, with Joker's seventy-year anniversary coming up in a couple of months, I'd like a compilation of his various origin stories. Starting with "The Man Behind the Red Hood!" and working its way through Alan Grant's (godawful) Shadow of the Bat Joker arc, "Images" (from LotDK #50), "Lovers and Madmen", and maybe, as a sort of "closing", the two-page Joker origin from Countdown to Final Crisis #31.

A Joker origin trade is a good idea. You forgot Case Study by Paul Dini and Alex Ross though. Easily my favourite Joker origin.
Big ones for me would be
- A multi volume collection of the Doug Moench/Gerry Conway/Gene Colan/Don Newton years in the early 80's. This when Detecive and Batman were intertwining, pre crisis Jason Todd, simple, surreal two issue tales with alot of the classic villains, beautiful art.
- Peter Milligans short Detective run + Dark Knight Dark City in one volume

The Barr/Davies issues just before Year Two.
Peter Milligan's stuff as well.
More volumes of themed craziness like The Black Casebook.
Some sort of collected home for the Batman material from Solo (some sort of collected home for all of Solo, really).
Great big Marvel-style Omnibus hardcovers of the Morrison run, with Gothic and those two issues from 52 included.

I'll third the requests for the Grant and Milligan stories to be collected. I bought a lot of Batman back issues in the last year and I'm surprised that so much great material has not been reprinted. These stories deserve to be re-discovered by the wider fanbase.
Marv Wolfman's output from the same era was a bit more hit-or-miss, but still his best stories deserve a collection too. Year Three is horribly underrated I think.
A lot of stories could do with a re-print, too - Devil's Advocate, Ten Nights of the Beast and the early LOTDK arcs have been out of print for too bloody long now.

I'd really like the Harley Quinn story 'The Code' from No Man's Land printed. Along with the rest of the Dodson's run on her solo series.

Those are all in trade...? Maybe out of print though.
Only Dark Knight, Dark City comes to mind.
I wouldn't mind some reprints like Legacy and Devil's Advocate.
My soapbox is for filling in gaps. Stuff like:
COMPLETE "The Last Laugh"
"Knightfall": Prologue" that collects the Bane stuff that happened pre-Knightfall
"Knightquest" a couple volumes that collects the stuff between Knightfall and Knightsend
"Aftershock" Collects the Aftershock stuff.
"Road to NML" Collects the Road to NML stuff.

Gothic got reprinted right around the time Morrison got started on Batman. I've got it on my bookshelf.

Ed Brubaker's run on Batman (#682-686, 691-607) and his "Dead Reckoning" story arc in Detective Comics #777-782.
The rest of Ed Brubaker's run on Catwoman (#25-33 and 37).
Alan Grant's early issues of Batman: Shadow of the Bat.
