Hmm.. I never thought of Yen Plus as really that adult. Though really it's more of a mixed bag than anything. Manhwa Jack Frost is certainly more adult and male oriendted but US ones like Maximum Ride and Night School are more aimed at older teen girls. What you're talking about is more seinen (adult male) titles, which I'm into. Sadly there's really no magazine for it and there really isn't much of a market for anthologies and in particular for that crowd. There was Viz's Pulp back in the 90s, but that's sadly long gone. So I guess you'll have to stick to collected editions and just sampling various series from those.

Super Manga Blast from Dark Horse was an anthology that ran for 5 or so years that featured primarily seinen manga titles like Shadow Star and Seraphic Feather. It ended a few years ago, so Yen Plus and Shonen Jump are the only real anthologies out in english at the moment.
There's one more manga anthology still being publishers by Icarus, but that's Hentai manga [ie- porn], which doesn't sound to be what you're looking for.
As mentioned, VIZ also published a magazine called PULP that featured seinen manga, underground manga [Junko Mizuno], and the "i can't believe this is shojo manga" Banana Fish. You might wanna look for back issues- not all the series from it are still in print, so it's a nice find.
Other old anthologies you might want to track back issues of-
-Antarctic Press's Mangazine- assorted formats over the years, some comic sized with original material, some a mix of reprints and new in a magazine format and in colour, with art mostly from domestic artists.
-Radio Comix's Mangaphile- a comic-szied anthology with indy manga that ran in the early 00's for about 30-ish bimonthly issues. Some nice gems in it here and there.
It sounds like you're mostly looking for stuff aimed at older teens, which there is a whack of, but there are some mature readers [ie-aimed at adults] lines out there-
- VIZ's Signature Line- Golgo 13, Black Lagoon, Monster, Maison Ikkoku, and more, lots of seinen titles to chose from. Also includes some manga that are shonen or shojo titles but are just waaayyyy too out there for most manga readers [Drifting Classroom anyone?]. Detroit Metal City is awesome btw, but very much so not for everyone.
-Dark Horse- a lot of DH's titles are seinen manga from japanese magazines like Young Animal and Afternoon. Berserk, Hellsing, Gunsmith Cats, Masumune Shirow titles all are your friends.
- Aurora Press's LuvLuv line- it's RediComi aka LadyComi, basically Harlequinn novel style stories for the ladies.
- Del Rey and CMX both differentiate their mature readers titles with higher prices and larger trims on series like DR's Suzuka, Basilisk and Gacha Gacha and CMX on titles like Orifina, Presents and Astral Project
- TopShelf is doing an english edition of the AX anthology magazine, but instead of being a periodical, it's a large format paperback anthology.
Though it sounds like you're looking for stuff for older teens, so if I were you, I'd just read reviews [mangablog.net links to lots of review sites], and go from there.
If you want a monthly comics fix, you might also want to check out domestic comics.

Inthat case,I'd look at domestic comic publishers if I were you. Del Rey, SLG Comics, and VIZ are all currently accepting submissions for comics [as well as other smaller pubs]. Be sure to look at their catalogues to see if your work would be appropriate for them [and their guidelines so you send them what they want in a submission- ie) the right number of sample pages, a cover letter, what not to send them]. And if you don't draw, look at finding an artist to put the pitch together with.
There's also the fact that Yen it self is taking submissions.

cool thanks for the helpful advice, i'll have to check out those companies.
i felt like the story i'm working on would be perfect for a publication like vertigo, so i decided to try to do it as a comic. i didn't realize how few american comic companies there are that are willing to print that type of story.
its been a little discouraging so far, but i feel like a i have a good story so i am going to keep working at it.

Wasn't there Smile as well, several years back? And Raijin Comics had an anthology. Both out as print as well.

Raijin was something different- mostly mature manga aimed at men with some other random series from ComicsBunch creators.
Smile was wierd at first- I have some sample issues from before it became a full-on comics anthology magazine. Pop singer Vitamin C is on one of the covers, with a little add letting you know they have Sailor Moon SuperS in the corner. It was like a poorly laid out, nerdier version of Seventeen.
There was also Mixxzine [loved the colour paper differentiating the series :)] and it's successor Tokyopop, which was a wierd anime magazine/jpop culture/few manga chapters combination magazine that Mixx took it's name change from after the magazine folded.
VIZ also published MangaVizon and ANimerica Extra [i have most of Animerica Extra. It was Shojo Beat's predecessor, devoting the last year of it's output entirely to shojo]
