I am a certified veterinary technician with a degree in animal science who has had hands on experience with colobus and spider monkeys.

I know a chimpanzee is not a monkey ;)

However, for the sake of humor (and since talking white apes are referred to in a tongue-in-cheek manner by my favorite author as monkeys)?

The thing is, "monkey" is an inherently funny word. (http://tvtropes.org/pmwiki/pmwiki.php/Main.InherentlyFunnyWords) And IMO, one of the funniest. "Chimp" is only a kinda-funny word, while "ape" is not especially funny at all.
