If I wanted to read Robin's series from the start, what order would I have to read the TPBs?

It's fun that after issue 6, it's automatically followed by issue 121

What it is is a shame. Those missing issues were excellent.

Especially the first 100 issues, Chuck Dixon's run. Those are the comics that got me into comics.. I'd say its well worth it to get the back issues, those are great stories.

I'd recommend you avoid all the trades, though, especially the ones with "Willingham" and "Beechen" as the writers. The uncollected stuff (#1-120) is pretty damn awesome, though.

I would also recommend tracking down Chuck Dixon's original run (#1-100) in back issues. Aside from the first six issues, collected in Robin: Flying Solo, the rest of Dixon's run has never been reprinted in TPB.
I also recommend avoiding all of Bill Willingham's and Adam Beechen's runs. Then return for the final two TPBs: Robin: Violent Tendencies, by Dixon, and Robin: Search for a Hero, by Fabian Nicieza.

Now that they're reprinting some more recent material in Showcase, I'd love to see some Showcase volumes featuring Dixon's Tim Drake stories. Even though I read the originals, I'd buy these in a heartbeat. Same for Nightwing.
