I haven't read any X-Books (besides tie ins with Civial War & Planet Hulk) in many years. What would be a good "jump back" point to start reading them again?

Uncanny is pretty freakin' boring and it's not worth the 2.99, much less the 3.99 it's coming up to. Which is about ten bucks in your country.
X-Men Legacy is going to change direction soon but it's a wait and see scenario, unlike most everyone, I don't think Mike Carey is the savior of the X-Line.
X-Force and X-Factor are probably your best bets. X-Factor can be hit or miss though, and X-Force is extremely over the top violent but there's a good story behind it. It does have the best written Wolverine in a team setting.

I've been grabbing X-Force and been enjoying it a lot. I see it as the "mature readers" X-Men. But I was meaning things like Uncanny and Legacy with my original question. I'll take your advice and see how things pan out, like you said $10 would possibly be the cover price down here and thats a lot to spend on a single book

I would suggest Uncanny 500 to get yourself up to speed with the current direction. But the series is laden with complaints - valid complaints. It's not just fan-man or fan-woman rage. I think the problem is that the series is more like an 80s GI Joe cartoon - featuring a large cast but with little to no development. That's problematic to a series, that in the past has prided itself on character development issues.
X-Force is a great title and has callbacks to all those crazy 90s storylines and characters that we've all grown to love or despise- depending on your take.

Yeah, to be honest I wouldn't bother. Read Thor and Iron Fist instead.

just get x-force. you can pretend the rest of the x-men don't exist to an extent.
new mutants is also good. you can also pretend the rest of the x-men don't exist a little bit there too.

I picked up Uncanny #500 and starting picking up the Manifest Destiny tie-ins but it was just scatter shot.
I dropped it about mid-way and have no interest at all in any of the X-titles.
