I've seen it mentioned throughout many Daredevil issues that he had a sensei who taught him martial arts. But I was wondering if it was mentioned in any issues which one that was?

Daredevil sensei is Stick , who also mentored Elektra.

Boxing - By heritage/from his father.
Ninjutsu, Jiu jitsu & other Japanese styles that's less rigid than Karate - Stick.
Acrobat - Training & his "gift" allow him to do so.

In other words, fusion mixed martial arts.

Daredevil has a unique blend for various martial arts. First of all he has the punching technique and power of a heavyweight champion boxer(DD weighs 200obs). Add to that the balance of a circus acrobat (a 200 lbs acrobat). Actually due to his enhance senses, his balance is even better. Then he has martial arts skills of the Japanese arts of ninjutsu, judo and aiki-jujutsu. The thing is DD's fighting style is a unique blending of those arts. So he has the balance and skill of a master martial artist who is an acrobat, but he hits as hard as a heavyweight boxing champion.

yeah, everyone's hitting the nail on the head about Matt. His base is Western boxing, and the Eastern styles he knows are built off of that foundation. And they're all enhanced by his senses. Daredevil's fighting style is rather interesting because he can be acrobatic and flashy like a stereotypical untouchable ninja type, or when he's totally pissed off and losing his mind he starts fighting like a hardcore brawler, even using things like glass and mailboxes to injure his opponents. That's when he leaves the technical stuff alone and just goes back to his roots of hard and fast no-nonsense slugging and streetfighting tactics, which we saw a lot of in recent years with all of the stress he went through when dealing with Kingpin, Owl, and Bullseye. Gotta love the guy.

I'm surprised there hasn't been much said about the techniques he used on the Owl in prison. DD should really cut loose more often.

Everyone else already got the answer, but really, you can switch around all of the names of the styles and nothing would change.

why would he want to just BASH some short stubby guy way past his prime who looks like he belongs on a bag of Wise potato chips? the first time is TOTALLY justified because all of those guys deserved to have the natural hell beat out of them. But AGAIN??? I guess Owl started the fight, huh? I would have just kicked him in the nuts and spit on him afterwards. I guess Matt's a lot meaner than I am lol.

I actually think Matt should be depicted a better fighter than he really is.

He should be on par with Captain America.

The Owl got it bad the second time and at that point in the story, he deserved it.

As far as I've seen Matt was on par with Cap. Seems he just couldn't overcome the SS serum.

or in plain speak he punches and kicks guys till they fall down and calls it whatever the current writer wants to.
