UFF 21-23 introduced the characters and the Zombie World.
Then came the Marvel Zombies miniseries.
Marvel Zombies: Dead Days was a one-shot set BEFORE UFF 21-23, but that came out after the Marvel Zombies miniseries.
The Army of Darkness miniseries was kind of set at the same time as Dead Days, I think. Also before the UFF issues and before Marvel Zombies.
Then came Marvel Zombies 2.
There were also 3 more issues of UFF (28-30? - around then) featuring the Zombie Fantastic Four.
I thought the initial three UFF issues were great and the first Marvel Zombies was great. Second Marvel Zombies was just OK. (Some people hated it, I thought it was OK. It had moments.) The AoD series was kind of goofy, but it was drawn well enough and fit more or less into continuity. Decent.
I didn't care for Dead Days too much, primarily because I liked the concept better with some things left to the imagination. Dead Days was more info than I need it.

Both cover the time immediately before and after the start of the infection.

Right. When you meet the zombies in UFF, there's a very brief explanation of how they got that way. Dead Days tells that story and fills in the details. AoD kind of does too, although I think there are a few minor inconsistencies.

MZ vs AoD is the first you need to read since this is where the infection started, second comes the Dead Days one shot. MZ vs AoD shows what happens to Ash in the MZ world and Dead Days shows what the other characters Ash didn't came in contact with do or what they do after they met him. Next is the UFF Crossover arc, then the MZ mini series this is right after the UFF Crossover arc. In the end of the Crossover arc you see MZ World Magneto do something and in MZ you see what happens to him right after he did that. Next is the UFF Frightful arc Ultimate Doom arrives right at the end of the MZ series but before the time jump in the last few pages. Then comes Black Panther 28-30 which is after the time jump and last the second MZ mini series.
1. MZ vs AoD #1-5
2. Dead Days
3. UFF #21-23
4. MZ #1-5
5. UFF #30-32
6. MZ last few pages after the 5 year time jump.
7. Black Panther #28-30
8. MZ 2 #1-5

Skip it all and just get the Walking Dead trades instead. Same writer, better story.

Why would he get the worse comics? Marvel Zombies is superior, especially if you are a Marvel fan.
