Anyone know a good issue number to jump on for all of these? I wanna read some of them but I have no idea where to begin. Thanks for any and all help.

Well, they've just started a year long cross-over called 'Vector' that will run through all four Dark Horse Star Wars titles. I think we've only had the first two parts of it so far in the Star Wars: Knights Of The Old Republic title.
Basically the 12 parts of the 'Vector' story arc will be spread throughout the different titles like this -
Knights of the Old Republic #25-28
Dark Times #11-12
Rebellion #15-16
Legacy #27-31.
As I say, only Knights Of The Old Republic #25 & 26 have come out so far I believe. This might be a good way for you to sample the four different titles over the course of the year?
Alternatively, I can highly recommend Star Wars: Dark Times for some post Episode III goodness. We're only up to issue #10 so far and have had two 5 issue story arcs. So you can either jump on at issue #1 (which I'd recommend) or issue #6.
The first five issues of Dark Times have also been collected in the Star Wars: Dark Times Volume 1 - The Path to Nowhere TPB. You can read a preview of it online here (http://www.darkhorse.com/profile/preview.php?theid=13-733). Just hit the 'next page' link to start reading.
You can pretty much sample all of Dark Horse's Star Wars titles in this way on their website.

It's worth nothing that of all the series, Rebellions seems to be the most heavily reliant on previous stories, specifically the run of Empire. It's probably not too hard to follow, but you miss alot of background for the non-movie characters. Of course, nowadays you could wiki anyone or anything you don't recognize.
When the Vector storyline wraps up at the end this year, Dark Times and Rebellion will go on hiatus for six months in exchange for a new Clone Wars series.
Personally, I find KOTOR to be the best series thus far, although they're all quite enjoyable. It's worth noting that the art in Vector is a very different style from most of the regular issues.
