Chocolate cake sprinkled with chocolate chips and laced with chocolate drizzle, covered in chocolate frosting and decorated with chocolate shavings and chocolate sprinkles. And if all you have is German chocolate, make the caramel chocolate caramel, and that there damn well better be chocolate coconut too!

Beer cake.
Yes, it doesn't exist, but a sad bastard can dream, ay ?
Au contraire, it DOES exist:
Beer Cake
Ingredients:
1 (18 1/4 oz.) package yellow cake mix
1 (3 1/2 oz.) package vanilla instant pudding mix
1 cup beer
1/4 cup vegetable oil
4 eggs
Directions:
Preheat oven to 350 degrees F (175 degrees C), grease and flour a 10 inch Bundt pan. Combine cake mix and pudding mix in a large bowl. Add beer and vegetable oil and mix lightly. Add 4 eggs. Beat at high speed until mixture is thick, creamy and smooth. Pour into greased and floured Bundt pan.
Bake at 350 degrees for 55 minutes.
Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Frost as desired.
And for me, either carrot cake or German chocolate cake.

Ah yes, there is cheesecake as well..... :) Though it's more of a custard than cake actually.
But what's not to love when the recipe usually includes 4 eggs, 3 packages of cream cheese and a cup or more of sugar...? :D

Honest (and rare non-jokey answer?)
Boston Creme Pie.
If that counts as a cake. If not, then lets say... Red Velvet.

And Cheesecake is Pie.
Actually, I prefer pie to cake as well. As a matter of fact, for the last few years, I've requested pie for my birthday instead of cake. All the ones listed by sk are great, but I'd add coconut custard to the list. And anything with berries.

Besides there's enough alcohol in chef anyway, the cake is just..... well, icing on the cake. ;)

What is that?
I'm not even Southern, and I rate Red Velvet up there as the best.
It's actually really just a kind of chocolate cake. The red color is artificial and frankly kind of extraneous (although I've heard of beets being used for it too).
But its got buttermilk in it, which helps the yummy factor.
The icing doesn't actually have to be cream cheese I think, although that's popular. I actually think a butter cream type frosting is more common (which makes sense if you think about it, since it's combined with a cake mix with buttermilk in it).
EDIT - Here's a typical recipe (http://southernfood.about.com/od/chocolatecakes/r/blbb146.htm), minus the icing.

Not if you keep it covered properly. Instead of a glass cake dish, store it in an airtight plastic cake container.
Trust me. It'll even keep in Mississippi humidity.

My grandmother's caramel cake!
She makes it all FROM SCRATCH, and cooks the cake part in a skillet. The icing is homemade caramel, and utterly delicious.
It's SIN on a plate. :D
