What are all the 52 aftermaths stories and are they good/important to understanding anything?

I don't know about the rest of them but Black Adam was fantastic. It basically shows what happened to Adam from the end of 52 to when he gave all his power to Mary Marvel in Countdown. It is a great story and you see some other tie ins from 52 like what happens to Felix Faust after being trapped in Doctor Fates tower by Ralph Dignby. All that and some big time stuff with Adam's wife Isis.
Booster Gold is also a great read and takes off right where 52 ends with Booster and Rip Hunter repairing some of the leftover damage from Mister Minds rampage in 52.
As for the Crime Bible and the Four Horseman I have no idea what they were about or if they were any good.

Crime Bible was a great read for those who liked the story-line revolving around Renee Montoya. I second Black Adam. It's a good read as well.
Countdown to Adventure continues the story of Adam Strange, Animal Man, and Starfire. I've only read the first couple of issues, but it seems pretty good. Mostly, I enjoyed their storyline during 52, so I was interested in the past.
Four Horsemen isn't the strongest story of the bunch, but it's still a pretty good read if you're interested in what happens with the Four Horsemen.

Um....Death, Pestilence, War...someone else (Famine maybe?). The Biblical Four Horsemen.
If you read 52, you know who they are. If you didn't read 52, then why are you reading their aftermaths?

Because I am about to start 52 and am trying to figure out what aftermaths to read so I can be caught up by Final Crisis.

Aahh! Well, I don't really think any of the aftermath stories will have that huge of an impact on Final Crisis.
That being said, most people seem to pick up the aftermath stories based on what story arcs in 52 they enjoyed.
Like Black Adam and Isis in 52? Read Black Adam: The Dark Age (6 issue miniseries).
Like Renee Montoya and The Question? Read 52 Aftermath : Crime Bible - the Five Lessons of Blood (5 issue miniseries).
Like the space adventures of Starfire, Adam Strange, and Animal Man? Read Countdown to Adventure (8 issue miniseries, issues 1-7 currently available)
Like the Infinity Inc story arc? Then read the Infinity Inc. ongoing series (issues 1-6 available now)
Like Booster Gold? Regardless of the answer to that question, you should read the Booster Gold ongoing series (issues 0-6 currently available)

Need to know more about the Helmet of Doctor Fate? Try Countdown to Mystery!

There's no official proof that I know of (something might have been said in an interview, I can't remember), but I have a feeling that Booster's book might have something to do with Final Crisis. Regardless, as said above, you should read it anyway.

In the back of the first issue it shows in a "Future Panel" Booster Gold will either tie-in too Final Crisis or he will play a role in it.

I bought the first 3-4 issues of Infinity Inc and the very abstract art & storytelling really left me flat. Oddly enough, I would've loved it as a standalone Vertigo series, but it didn't seem to jive well with those characters or their voices as seen in "52". I've heard they were going put a new creative team on it after the first story arc (which may have happened already, but I just haven't remembered to check)

Don't forget the excellent miniseries "The Helmet Of Fate" (now available in TPB) which takes place before Countdown To Mystery! (THOF picks up from Cpt. Marvel tossing the helmet into deep space near the end of Infinite Crisis)
