We're having pork chops.

Smothered Pork Chops

8 thinly cut (about 1/2-inch thick) pork chops, about 3 pounds
2 teaspoons Essence, recipe follows
1/2 cup olive oil
1/4 cup plus 2 tablespoons all-purpose flour
4 cups thinly sliced onions
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped garlic
4 bay leaves
2 (14 1/2-ounce) cans reduced-sodium chicken broth
1 1/2 cans water (measured in the chicken broth cans)
1 pound smoked sausage or andouille, cut crosswise into 1-inch slices
1 pound russet potatoes, peeled, and cut into 1-inch cubes

Season both sides of the chops with the Essence.

Heat the oil in a large, heavy pot or Dutch oven over high heat. Add the pork chops, 3 to 4 at a time, and lightly brown, about 2 minutes per side. Remove the pork chops and transfer to a platter. Set aside.

Reduce the heat to medium. Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes. Add the onions, salt, and pepper. Cook, stirring, until the onions are slightly soft, about 5 minutes. Add the garlic, bay leaves, chicken broth, and water. Bring to a boil. Return the pork chops to the pot. Reduce the heat to medium-low, cover, and simmer for 45 minutes. Add the smoked sausage and the potatoes. Bring to a boil, and then reduce the heat to medium-low, and cook, uncovered, stirring occasionally, for 30 minutes.

Remove from the heat. Serve with either steamed white rice or rice pilaf.

Thats Emerial's recipe, but I always did something similar.
But its yummy.

Here is another yummy dish, I made this last night.

Collard and Mustard Greens in Ham Hock Gravy

1/2 cup vegetable oil
2 cups thinly sliced yellow onions
1/2 cup chopped celery
1/2 cup all-purpose flour
12 ounces beer (any type)
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
4 bay leaves
2 tablespoons chopped garlic
8 cups chicken stock
3 pounds ham hocks (about 4 medium hocks)
2 bunches (about 2 1/2 pounds) collard greens, thoroughly washed, picked over for blemished
leaves, and tough stems removed
2 bunches (about 2 1/2 pounds) mustard greens, thoroughly washed, picked over for blemished
leaves, and tough stems removed
1 cup water

Heat the oil in an 8-quart pot over medium heat. Add onion and celery, and cook until softened. Add flour, stir with a wooden spoon until smooth, and cook for 1 to 2 minutes. Add beer, and then add all the remaining ingredients, adding the greens by the handful until all of them are combined in the mixture. Bring the mixture to a boil, reduce the heat to medium-low, and simmer, uncovered, until the hocks are very tender, about 2 hours.

Remove the bay leaves and serve warm.

Just don't play Sabotage. Ye gods, I hate the talky parts, and that song is all talky parts

That makes a lot of sense. I haven't tried the Glen Breton yet, and I haven't talked to anybody else who has. Maybe I'll do that first.

I disagree with this, why not have something pleasurable and delicious to start with, rather than sullying your taste buds in advance?


I saw part of an episode. The show isn't misogynistic or anti-semitic, the characters are. The point is to show how sexist and racist big business was in the not so recent past and by doing so condemn such attitudes as they existed then and persist today.

It's like House. The character is misanthropic and a selfish egotist, but the show consistently demonstrates that these same characteristics make him a miserable person.


Fair enough, that was what I wanted to talk about, but no one responded.

Fortunately, my brother is awesome on guitar (He beat Free Bird on expert on GH2 for reference). I'm alright on guitar. And I would rock drums without the foot pedal.

Let's put it this way, the game thinks I'm good. And the game can be pretty demanding on the higher levels. That said, it's mostly measuring timing and pitch, as opposed to any particular aesthetics.

Timing in the sense that you have to hit this note now, since you can hold a note before and after you are supposed to sing it. You don't even have to sing the words.

That said, I fucking hate Gimme Shelter. Why the fuck do they make you sing both lead and backup vocals? I'm doing a fucking duet with myself, and I have trouble keeping the pitch right between the woman and Mick.
