What's worth checking out that I may not know about? I've been thinking about doing the Gundam thing, but there's so much of it out there, I don't know where to start. So, any suggestions?

What kind of genres are you interested in?
What have you seen already and liked/disliked?

I'm interested in a variety of genres.
I liked RahXephon, Cowboy Bebop, Chrono Crusade, Noir, Hellsing, Gantz, and the new Guyver. I thought Wolf's Rain wasn't bad. Witch Hunter Robin was okay.
I wasn't fond of the Ninja Scroll series. Probably because the feature is one of my all-time favorite animes.

Pretty much whatever you want. Netflix has a damn good selection, so its hard to say what you should add to it when there are so many things. If your genre preferences are varied, like mine, then you could go in any number of directions. I usually purchase, rent, or view Anime in groups, with each one fulfilling a certain role, like the comedy series, the mindless action series, the deep sci-fi stuff, the Fantasy adventure, the fanservicy comedy shows, etc.
To be quite honest, I've used Netflix as a means to rent Anime that I anticipated as being just ok or alright; in other words, stuff that I wanted to see but I wasn't sure I wanted to spend the money to buy the 6-8 DVD's for them. So far I've used Netflix to watch Excel Saga, GTO, Kiddy Grade, Tenchi Muyo GXP, Tenjo Tenge, and now Air Gear. In the future I'm thinking of adding Read or Die TV and the various Ah My Goddess series (which I never picked up in the early days for whatever reason).
Of those, I can highly recommend GTO (Great Teacher Onizuka) as a comedy series.
Most of my other favorites are ones that I own; For Sci-fi I'd recommend the Stand Alone Complex series of Ghost in the Shell (both first and second Gig); for Sci-fi Drama I'd recommend Now and Then, Here and There; and for Sci-fi comedy I'd recommened Irresponsible Captain Tylor or Vandread.
If you liked Cowboy Bebop you might like Black Lagoon, which just started to get released Stateside, so Netflix will only have volume 1.
On the fantasy side of things, there are some really good serious Fantasy series (Record of Lodoss War, Twelve Kingdoms, and to a certain lesser extent, Utawarerumono); some comedic wacky ones (Rune Soldier), and some that are a little of both (Slayers, and Sorcerer Stabber Orphen[first season only, not the second]).
If you go Gundam at all, I'd actually recommend watching some of the shorter UC-continuity related material, like 0080: War in the Pocket or 0083: Stardust Memory. I found those ones to be some of the better Gundam series.

Re: Gundam, I haven't seem them all, but...
Most of the older Gundam series take place in the same universe. However, Gundam Wing, G Gundam, Gundam X, and Turn A Gundam are in their own universes. Gundam Seed and Gundam Seed Destiny, the most recent series, are also a separate universe.
08th MS Team is good.
0080 is good.
0083 is terrible. I couldn't stand the cast.
G Gundam is silly in concept, but some people like it.
Gundam Seed was okay. I hear Seed Destiny sucked though. (enjoyable if you like Kira and Lacus, bad if you like Cagalli or the new characters.)

If you're really interested in a variety of genres, Rumbling Hearts is a pretty good romantic drama series. There was some comedy relief, too, but I fast-forwarded through those because I couldn't stand the voice of the little blonde.
Right now, my g/f and I are halfway through Basilisk. She thinks that it's just as good as Ninja Scroll, but I think that Basilisk is much better. I thought that Ninja Scroll was an insult to my intelligence, while Basilisk is telling a more intricate tale of two ninja clans at war. I still think of ninjas as low-tech secret agents in black pajamas with cool tricks, but of course the Basilisk ninjas are basically freaky-looking superhumans who aren't very interested in stealth.

Basilisk is OK, but it borrows so heavily from Ninja Scroll that I couldn't possibly say it's better than Scroll (especially the film).
Check out these:
Nausicaa of the Valley of the Wind
Howl's Moving Castle
Macross Plus
Iria: Zeiram the Animation
Gunsmith Cats
Neon Genesis Evangelion
Perfect Blue
Akira (a must-see for anyone, really)
Golden Boy
Memories
Also, Spriggan rips off Akira and has no character development whatsoever, but the animation is some of the best you'll ever see. Trust me on that one.

The anime I would recomend is alittle tough to find, but I think its about the best thing ever on TV. Teknoman in the US, Starknight Tekkaman blade internationally. Also if anyone knows where I could find the sequal, Tekkaman blade II on DVD from an online retailer, could you help me find it. It's out of print, but I'm hoping theres still a way to get it. No auctions please!

Actually, Teknoman was the first anime series I ever watched, and it's pretty good. Better than any Gundam stuff you'll find.

It's a shame so few people know about it now! I'm such a huge fan I hope that my telling people about it leads them to get the DVD set. The version I have is so much more complete and uncut compared to the US TV airing.

Trigun?
Hikaru no Go?
GTO the anime was...all right. The manga is far, FAR superior but since Netflix doesn't stock that, it's not really an option.
Vandread, while to me is a B-list show, is still entertaining and fun if you can't think of anything better.
Last Exile is supposed to be very good, though I haven't seen it.
I don't suppose they have Welcome to the NHK in stock yet, do they?

Samurai Champloo
I second that notion. That's a great recommendation for anyone.
Some animes that I would recommend:
-Berserk*
-Baki the Grappler*
-Basilisk
-Rurouni Kenshin (series) or Samurai X (the movie)
-Vampire Hunter D-Bloodlust
-Jin Roh
-Perfect Blue
-Hellsing
The animes with the asterisk besides them are the ones that I HIGHLY recommend over anything. Overall, these are some great titles to check out if you haven't seen them already.

Yeah you're right. The so called "ninjas" in Basilisk reminds me more of samurai if anything. Some of them actually believe in honor (for example Oboro), a concept that shouldn't exist to the typical ninja. I don't want to say much because I know that you're still halfway through the series. I hope you're enjoying it because I know I did.

I'm rewatching Lain, which is a very odd and trippy and cerebral number.
And I'm watching Samurai 7, which is the Seven Samurai with Giant Robots, which I would have thought was a no-brainer.
And I can't recommend highly enough Patlabor 2 (the movie). Very, very artsy and pretty, and yet has giant robots hitting each other too.

I can't believe you haven't checked out Trigun. An amazing story!
Also check out Outlaw star, it's quite good.

I've seen or own most of those. Except Kenshin. The length of that series makes me wary. Is the Berserk anime better than the manga? I couldn't really get into that.

Simple solution: Watch the first sixty episodes or so and then consider that the end of the series. You'll be happier that way.
It really is worth seeing, it just goes on way beyond the point when it should end.

Well, either that or switch to the manga.
(For those who don't know, the anime series caught up to the source manga and the creative team decided to make up their own story -- similar to the recent seasons-long fillers of Naruto. In Kenshin's case, it ended up killing the series.)
The third storyline will be covered in the OVA's known as Samurai X (titles are different due to naming rights held by different companies) but I consider it to be a very abbreviated version of the manga.
