X's speech in JFK. It's a bit long, so I won't recite it here.
And, of course, one of my very favorites:
"Hold your ground, hold your ground! Sons of Gondor, of Rohan, my brothers! I see in your eyes the same fear that would take the heart of me. A day may come when the courage of men fails, when we forsake our friends and break all bonds of fellowship, but it is not this day. An hour of wolves and shattered shields, when the age of men comes crashing down! But it is not this day! This day we fight! By all that you hold dear on this good Earth, I bid you stand, Men of the West!"

I love the JFK speech, because for that short period that entire movie has a purpose, lended by Sutherland's conviction in his performance. It falls to crap once the scene is over, but what a scene.
My personal favourite scene though is Dennis Hopper's 'history lesson', from True Romance :D

How could I forget this classic:
"Son, we live in a world that has walls, and those walls have to be guarded by men with guns. Whose gonna do it? You? You, Lt. Weinburg? I have a greater responsibility than you could possibly fathom. You weep for Santiago, and you curse the marines. You have that luxury. You have the luxury of not knowing what I know. That Santiago's death, while tragic, probably saved lives. And my existence, while grotesque and incomprehensible to you, saves lives. Rutger Hauer as his life ticks in away in Blade Runner. "I've seen things you people wouldn't believe. Attack ships on fire off the shoulder of Orion. I watched C-beams glitter in the dark near the Tannhauser gate. All those moments will be lost in time, like tears in rain. Time to die."
