Hi there,
I have been a Marvel comics all my life, only picked up a few issues of Superman when I was much younger.
But some of my fave artists have done work for DC. For example, Pacheco, McGuiness, and Jim Lee. Im still a marvel fan, but I was flipping through some DC trades (Superman/Batman) series, and my interest was piqued.
Are there some outstanding trades that you can suggest for a very casual DC reader?

Green Lantern: Rebirth
Green Lantern: No Fear
Green Lantern: Revenge of the Green Lanterns
I think only Rebirth is available in Paperback at this time, the other two are in hardcover but still well worth the extra money.

The only stuff I know about Green Latern is from JLA.
Are there some exciting recent trades with great tales that dont require heavy knowledge of DC continuity?

Look for Superman: Red Son. Its a very interesting alternate take on Supes origin (A "what if" scenario in other words).
Also very recent is the Superman: Camelot Falls TPB. Just came out this past week. Pacheco's on the art in that one.

even some of my fave marvel writers are on DC now: Busiek, Loeb, Morrison.
Ive been living in a bubble.
I was thinking of starting my DC collection with the Superman/Batman Volume trades.

Loeb and McGuiness' run on Superman/Batman were great. It's only slightly dated however (happening before the events of Infinite Crisis), but its nothing that'll confuse you.

All the GL stuff he mentioned is highly accessible for a new fan.All is explained.
The Superman/Batman trades are a good start.Just don't look too much into them for story depth or anything deep.They're high octane action at its purest.
Also if you are familiar with the JLU cartoon,might want to check out these trades:

Green Arrow Archer's Quest
Batman/Huntress Cry For Blood
...there are tonnes more but take your time

If you want something good that isn't bound to continuity, I'd suggest DC: New Frontier. It's actually a great book to read if you're interested in getting deeper into a few of the fundamental characters of the DCU. Great writing, awesome art, newbie friendly, and easily accessible in trade paperback and extended Absolute hardcover format.
A couple new series that aren't bound to continuity, too: The Spirit, which is written and drawn by the same writer/artist that did New Frontier, Darwyn Cooke, and Shazam: Monster Society of Evil, a currently ongoing four-issue prestige format mini-series by writer/artist Jeff Smith (of Bone fame) about Captain Marvel.
