Yeah, sorry, I hate threads like these too, but after gobbling up so many Superman books during Infinite Crisis, I would like to continue. I really enjoyed the Sacrifice tpb, The Journey tpb, Infinite Crisis tpb, and somewhat enjoyed (with reservations) the three Ruin tpb's. There were also parts of Up, Up, and Away that I liked but for the most part it felt way too out-of-continuity and not enough in touch with current DCU happenings, especially after IC. So with this in mind which Superman title is bringing it right now? (Also, most of the trades I listed collected issues from various superman titles - I assume the post IC trades will mostly be staying within their respective titles?)

At the moment, I'd highly recommend Kurt Busiek's SUPERMAN, as well as Mark Verheiden's SUPERMAN/BATMAN. Both have great artists attached and I'm really into both their current storyarcs. I've seen a lot of praise for SUPERMAN: CONFIDENTIAL on the boards, but missed the first issue and may just end up picking it up in TPB instead. I think Johns and Donner's ACTION is trying to hard to emulate the movies, which is a turnoff for me. If you prefer to wait for the trades, then I'd just recommend the TPBs of the current storyarcs of Busiek's SUPERMAN and Verheiden's (not Loeb's, I stress) SUPERMAN/BATMAN. Although on second thought, it's hard to recommend trades for stories that haven't ended yet. You might just pick up the back issues for the current arcs and see how you like those instead.
Almost forgot, Grant Morrison's ALL-STAR SUPERMAN is not set in current DC continuity, but is a great Superman book nonetheless with tremendous art from Frank Quitely. If your guidelines are 'books that are set in current DCU,' then this isn't one of them, but I would still definitely recommend checking it out.

I cannot recommend All-Star Superman enough. It is one of the best Superman books in years and years.
However, if DC continuity is important to you. I'd suggest picking up the first issue of both Busiek & Pacheco's Superman and Johns, Donner & Kubert's Action and seeing which one you like more.

All Star Superman may just be the best the character has ever been (including Moore)
If you want to pick up two Superman books, check out Action Comics, which will likely have an influence on the comics decades from now, with the reintroduction of Zod.
Kurt Busiek's Superman is almost as good.
It's an excellent time to be a Superman fan.

I too feel that All-Star and Busiek's Superman are essential reading for any fan, borderline fan, or even hater of Big Blue.

I could not agree more... ALL STAR SUPERMAN feels like the 'real' Superman to me.. :)

Continuity doesn't seem to important to DC at the moment... So maybe it shouldn't be a factor in your decision...
It basically seems to be up to whoever is writing the particular comic at the particular moment in time...
Apparently, they get to choose the most convenient origin story (Birthright or MOS) to hang the skeleton of their story on with little regard for much of anything that came before...
Details and incongruities will be dealt with during the next Infinite Crisis...

All Star, Superman, Action Comics, Superman: Classified... they're all GREAT! The Superman books are all really firing on all cylinders.

Considering how quickly the last THREE Zod "re-introductions" (all within the past 5 or 6 years) seem to have been forgotten, this made me smile. Ah, the reckless optimism...
Seriously though, every one here is quite right; the superman books are great right now. Along with the 5 mentioned, he's also in Justice League, which certainly has him interacting with the modern dcu, if that's what you're looking for.

All-Star Superman is the best Superman has been since Binder/Swan. (and it may be best Superman ever)
I'm sure Busiek's Superman is good, (since he has done a good job with him before) but I haven't read it yet.

All-Star Superman is one of the best books, currently in publication.
the Donner, Johns, Kubert Action is off to an amazing start, and has made a regular, in-continuity "Super" book one of my favourites again - that takes a whole lot!
