Yeah, I'd not forget Sam Simeon (Angela and the Ape), and you might consider the JLApe series of DC Annuals for 1999, when the major players of the JLA (at the time, Superman, Batman, Aquaman, Wonder Woman, Flash, Green Lantern, and Martian Manhunter) are turned into gorillas by a "gorillabomb" by a group led by Gorilla Grodd. They weren't officially "real" apes, but, y'know, they did the ape thing for a while... ;)

Here is some that come to mind.
Apeface (Joker: Last Laugh)
Congorilla
Doctor Zaius (Human Defense Corps)
Gorbul Mammit (Gorilla Grodd's son from Impulse)
Grogamesh (Ulgo)
Simian Scarlet (from the JLApe Annual)
- Abu-Gita
- Admiral Trafalgo
- General Zolog
- Grimm
Primak [Form Zatanna took to test Black Lightning for membership in the League back in JLoA v1 #173]
Unnamed giant ape from an issue of Young All-Stars. Project M had it's body. It was suppose to be King Kong but it was never named in the story.
Unnamed large ape from a few issues back of Catwoman.

What was the name of the magical ape from the 5th-dimensional war storyline
in JSA awhile back? He wore a turban.

IIRC, Grodd was one of an entire race of intelligent apes living in Gorilla City. Salovar was their king; I think he died.:(

Also, the reason why I was curious is that I was reading Swamp Thing Annual 3 which has a great story about the various Apes of the DCU. Decent annual.

Not to derail, but this thread reminds me that Marvel has a suprising lack of super-simians. Does anyone know of others besides the Red Ghosts super-apes and the one from the Headmen?
