At the moment I only buy marvel comics, and I never really liked Superman. Seemed too powerful, had too many powers, stuff like that. Then I picked up the Frank Miller Batman stories, and got to see some DC action. From what I've heard, I already own the definitive Batman graphic novels (Year one, DKR, DKR2) but I'm still luke warm on Superman. If you could pick one graphic novel to convert a long-time Supes-hater, what would it be?

I wouldn't ever consider DK2 a "definitive" Batman story. Far from it.
But I digress.
I suggest picking up Superman: Birthright. It's a modernized update of Superman's origins; 12 issues long, written by Mark Waid and drawn by Leinil Francis Yu. A lot of fans took issues with some of the changes, but it's an enjoyable story with some strong (And unique) art.
I was never a Superman fan either, but Birthright really solidifed for me what makes the character unique and why he does what he does. I'd suggest giving it a try.

Yeah, there was something off about it. I figured I'd mention it though, since the two dark knight books are the only things I have that are remotely superman related.

Whatever Happened to the Man of Tomorrow and Red Sun are about the two best Superman books. Unfortunately neither are in current continuity so they might not sway you to liking his current stuff.

It wouldn't be anything by Frank Miller. The depth of Frank's disrespect and utter contempt for the character goes way beyond appalling.
I'd recommend Secret Identity to bring in a Marvel reader; if you're just an average person who has at least HEARD of the name Superman, you can already identify with the protagonist. Much like some of the other suggestions here, it's not in continuity, but could definitely bring you around to the character.
