gas or electric stoves? or it doesn't matter to you? me personally i have both huge gas,and electric stoves in my kitchen.what i found is that gas stoves are great for big home cook meals.electric is good for any thing thats light and quick.

Gas. Absolutely. I grew up using electric, and was afraid of gas stoves.
Then, in my first apartment, it had a gas stove---and I discovered the wonder of instant heat. :D Not to mention, it cools down quicker than electric eyes, also.
Plus, gas ovens in general don't have as strong of a range of "hot spots", so that's good too.

In a commercial setting gas is king, it's hotter & faster. At home I have electric. I wouldn't want a gas stove at home because of the ever-present grease factor. For some reason gas stoves put a greasy film all over everything in any room that you have one in. The constant extra cleaning you have to do with one of them is a big bummer. I don't have the time for that at home.

Gas, without a doubt. It takes a while to pick up the skills. But once you do, you have a very refined eye for hot/hotter/hottest settings.

I wouldn't want a gas stove at home because of the ever-present grease factor. For some reason gas stoves put a greasy film all over everything in any room that you have one in. This is acually so verry true.It took my mom a whole saterday morning to clean off the stove,the cabinets,the counters etc..Me my self i prefere electric for that verry same reason.I'm not a cooking virtuoso so i could care less about the type.

My dad worked as a cook at sea for a few years and he has always swore by gas cookers.

Gas heats up quicker, heats more evenly, and cools off quicker. That's especially important for things that include directions like "set on high ... bring to a boil ... cover and reduce heat ... simmer for xx minutes."
Generally gas has a higher top end (say, for cooking with a wok) and a lower low end (for a gentle simmer) than electric.
I heat up tortillas by just putting them right on top of my gas burner and paying attention. And if you're cooking anything that's supposed to catch on fire (like Banana's Foster, f'r instance), gas prevents you from having to reach in with a lighter.
The only downsides to gas that I've encountered are the "hot spots" on the stovetop, and a couple times we've come home and one of the pilot lights had gone out. Neither of those are that big of a deal. At this point, if I were looking for a new place to live, an electric stove might be a dealbreaker.

No contest. Gas is always better. The immediate control it gives you can't be matched by electric. Plus you can SEE what a medium heat is, not having to trust your dials.

I agree that gas is better because it responds instantly when you adjust it and creates a hotter, more even source of heat. The only limitation with my gas stove is that it simmers too hot.

At my cooking school we have gas i like it. It heats up fast i just hate when the pilot light goes out.

at first i didn't see the big deal when i was younger.but i noticed my cakes turn out much better with a gas stove.

I'm a good cook tho -- made Lemon-pepper coated Tilapia for dinner the other night, and already have a request to make it again.

Electric. Newer stoves heat up and cool down fast.
My best friend has no sense of smell and has a gas stove. It's a nightmare waiting to happen.
