Everybody makes cheese dip differently.

Normally, I make mine with:

1/2 block Velveeta
1/2 block Medium Chedder
A can of Rotel, drained
A can of Green Chilies
A can of Chili (preferably with beans)

I have been known to use shredded chicken breast and chili powder instead of canned chili.

Of course all of this is because I'm eating cheese dip now.

So, how do you make your cheese dip?

One block of Velveeta mixed with 1/2 can of Rotel.
Microwave till melted & serve with chips.

I should probably use a whole can of Rotel cause it gets so thick the chip seems to break before I even get to use it.

That's just lazy, Dark. Unless you're getting Stoby's your children will grow up to resent you.

I take low fat philadelphia and stir in a few spoons of my home-made pesto rosso.

What in the heavens is this "Rotel" you speak of?Diced tomatoes with diced chiles mixed in.

I have two versions.

#1 - Chunk of velveeta, dollop of salsa, liberal amounts of whatever hot sauces are lying around.

#2 - 1 lb. velveeta, 1 can Rotel, 1 small onion (diced), 1 can stewed tomatoes (eighthed), 1 cup salsa (as hot as is commercially available), 1 can diced chiles, 1/2 cup jalapenos (diced), 1/2 each red, green, and yellow pepper (diced), 1 habanero pepper (diced), liberal sprinkling of garlic powder and whatever good quality hot sauces are lying around.

Melt the cheese on a low heat. After making sure the vegetables and whatnot are as dry as possible (excess moisture causes the sauce to separate), fold them into the cheese. Cook for . . . hell, I dunno. I just cook it until the vegetables are soft and it tastes good. I usually have to end up adding more cheese to get the consistency right, though.

It's actually better reheated the next day, for some reason.

I've heard that this Veleeta stuff is like cream cheese.

Is it the same as Philadelphia (the stuff Kraft make in the UK which is a white creamy cheese spread) or is it completely different?

EDIT: Sorry, I've just found out that it is a processed 'fake cheddar' and not a spread.

Do you guys in the States get Philedelphia over there as it is made by the same people?

Expletive Deleted, you have a friend for life. Anyone who uses ingredients described as “hot as is commercially available”--or orders “as hot as you can make it,” for that matter--well, I’m in your corner. Lead on.

Do you guys in the States get Philedelphia over there as it is made by the same people?Yep. It's the most popular brand of Cream Cheese on the market.

Velveeta isn't really cheese at all, but it's cheese-like and melts well.Expletive Deleted, you have a friend for life.Nifty!

I have to say, it's getting tougher and tougher to find good "hot" salsa. You used to be able to get stuff that'd have you spitting fire for a week, but now all that's available in most grocery stores is glorified "medium."
